Cheese & Broccoli pasta

Ingredients

  • 280g penne pasta
  • 280g broccoli, cut into florets
  • 25g butter
  • 25g plain flour
  • 300ml milk
  • 1 tbsp mustard
  • 140g cheddar, grated

Directions

To begin, cook the pasta and add the broccoli during the last 4-5 minutes of cooking. Continue until both are tender, then drain well. Next, preheat the grill.
In a saucepan, heat the butter and add the flour. Cook for a minute, then gradually pour in the milk while stirring constantly between each addition. Continue stirring until it boils, then let it simmer for two minutes before adding in the mustard, half of the cheese, and seasoning.
Combine the pasta and broccoli with the sauce and transfer to an ovenproof dish. Sprinkle the remaining cheese on top and place it under the hot grill for 3-4 minutes until it turns golden and bubbly.
