Broccoli & Hummus

Ingredients
- 250g Broccoli, cut into florets
- 2 Cloves garlic, minced
- I Lemon, zest & juice
- 75ml olive oil
- 2tbsp almond butter
- 2 tablespoon fresh parsley
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tablespoon roasted sesame seeds
Directions
To begin, start by cutting the broccoli into small florets and boiling them in salted water for only 5 minutes. Once cooked, use a slotted spoon or sieve to remove the broccoli and place it in a food processor or mixer.
Next, add all the remaining ingredients - including lemon zest and juice, tahini (or another nut butter), parsley, salt, and pepper - to the food processor or blender. Gradually pour in the oil while blending everything together.
Once finished, transfer the mixture to a serving dish. Sprinkle sesame seeds (if desired), drizzle some extra olive oil, and add a garnish of fresh parsley.
